Oatmeal Apricot Cookies

Since I'm on an apricot kick, I thought I'd bring you along for the ride. These chocolate apricot cookies are to die for. Not going to lie, I especially enjoy the chocolate chunks...something I don't usually include in my baking. I couldn't be happier with my decision to make the addition though. I found this recipe on Ascension Kitchen, and made a few adjustments to match my taste buds. Hope you enjoy these as much as I did!

>> Ingredients:

  • 2 large bananas

  • 1 cup wholegrain oats quick oats or rolled oats will not work

  • ¾ cup coconut desiccated, fine

  • ½ packed cup chopped dried apricots organic, sulphur dioxide free

  • 70g roughly chopped dark chocolate (small handful)

  • 1 teaspoon vanilla extract

  • ½ teaspoon cinnamon Ceylon

  • 1½ teaspoons coconut or olive oil

>> Directions:

  1. Pre-heat oven at 170˚C.

  2. In a large bowl, mash the bananas well,

  3. Add all other ingredients (use your hands to combine, I used my hands).

  4. Roll a tablespoon of mixture at a time into a ball and place on a tray lined with baking paper, then flatten them down slightly.

  5. Bake for 8-10 minutes then let cool before serving. Store in an airtight container.
