Oatmeal Apricot Cookies
Since I'm on an apricot kick, I thought I'd bring you along for the ride. These chocolate apricot cookies are to die for. Not going to lie, I especially enjoy the chocolate chunks...something I don't usually include in my baking. I couldn't be happier with my decision to make the addition though. I found this recipe on Ascension Kitchen, and made a few adjustments to match my taste buds. Hope you enjoy these as much as I did!

½ teaspoon cinnamon Ceylon
1½ teaspoons coconut or olive oil
>> Directions:

In a large bowl, mash the bananas well,
Add all other ingredients (use your hands to combine, I used my hands).
Roll a tablespoon of mixture at a time into a ball and place on a tray lined with baking paper, then flatten them down slightly.
Bake for 8-10 minutes then let cool before serving. Store in an airtight container.
Enjoy my People!!
