Cauliflower & Chickpea Patties

And again....chickpeas and cauliflower. I told you I'm obsessed. Dora Daily shared with her readers that she made these, and ate them all in one day....and I believe her! They are super tasty and are great topping a salad, with some veggie scramble for breakfast, or as a quick snack. They would also be tasty on a bun like a burger.

You WILL make it, eat it, and enjoy!

>>Ingredients:

  • 1 head Cauliflower, florets broken apart

  • 1 can Chick Peas rinsed and drained

  • 1 bell pepper diced small

  • 1 onion Diced small

  • 2 cloves Garlic Minced

  • 1 cup Panko

  • 1 tsp Turmeric

  • 1 tsp Cumin

  • Salt and Pepper to taste

**Trade out the panko for flour or oats for glutton free should you choose

>>Directions:

  1. Preheat oven to 375.

  2. Boil or steam cauliflower until soft.

  3. Sauté onion and bell pepper over low heat until soft.

  4. Add garlic and saute for another minute or so.

  5. In a large bowl, smash chick peas up well with a fork or the bottom of a cup. Add cauliflower and smash up as well.

  6. Add all other ingredients and stir until combined. Mix should be wet but come together in a ball without falling apart.

  7. Carefully make a ball in your hands with the mix. I did mine a little bigger than a golf ball. Press ball between hands to make a patty.

  8. Place patty on oiled pan or baking dish. Continue with the rest of the mix.

  9. Bake for 25 Minutes, flip the patties. and bake for another 20 minutes or until browned.
