Double Chocolate Banana Quinoa Muffins.

I love chocolate. I mean, love it. Chocolate doesn't ask questions, chocolate is just there. That's exactly what makes this healthy version of chocolate muffins so amazing to me. I hope you enjoy them as much as I do. Simplicity at its best! xo.


1 cup all-purpose flour

1/2 cup cocoa powder

2/3 cup brown sugar

2/3 cup granulated sugar

4 teaspoons baking powder

1/2 teaspoons baking soda

1 teaspoon salt

2 cups cooked quinoa

1/2 cup mini chocolate chips

2 cups mashed bananas (about 4-5 large bananas)

4 large eggs

optional: 2 teaspoons vanilla extract


  1. Preheat oven to 350 degrees

  2. In a small mixing bowl smash bananas until smooth, set aside.

  3. In a large mixing bowl sift together flour, cocoa powder, baking powder, baking soda and salt. Mix in quinoa, eggs and smashed bananas until batter is completely smooth. Stir in chocolate chips.

  4. Grease muffin tin with coconut oil.

  5. Fill each muffin tin 3/4 full.

  6. Set in oven and bake for 16-18 minutes.

  7. Remove from oven and allow to cool in the pan 3-5 minutes.
