Banana Chocolate Chip Oatmeal Pancakes


You haven’t lived until you have tried banana pancakes. Lately I have been obsessed with oatmeal, its healthy, keeps you full and you can put it in pretty much everything from shakes & energy bars to pancakes! Lately I've been a bit homesick, so I had my dad send his famous pancake recipe my way. Hope you all enjoy it as much as I do!

Ingredients

  • 1 Cup Oats

  • 1½ Cup Flour

  • 1 Tablespoon Sugar

  • 3 Teaspoons Baking Powder

  • Pinch of Salt

  • 2 Eggs

  • 1½ Cup of Vanilla Soy Milk

  • ¾ Cup Soy Milk + 1½ Tablespoon Vinegar

  • 1 Large Banana Sliced Thin

  • Chocolate Chips

Instructions

  1. In a blender grind the oats until it resembles flour.

  2. Mix all the dry ingredients and add in eggs and 1½ cup of soy milk, combine.

  3. In a cup combine the ¾ cup soy milk with vinegar and let sit for 2 minutes.

  4. Add the mixture into the batter and stir!

  5. Get your pan nice and hot and add a tab of butter to prevent the pancakes from sticking.

  6. Place batter in pan and add slices of banana and chocolate chips on top.

  7. Once you think your pancake is done **when bubbles appear, and begin to pop - flip it over and let it cook on the opposite side.
