Banana Chocolate Chip Oatmeal Pancakes

You haven’t lived until you have tried banana pancakes. Lately I have been obsessed with oatmeal, its healthy, keeps you full and you can put it in pretty much everything from shakes & energy bars to pancakes! Lately I've been a bit homesick, so I had my dad send his famous pancake recipe my way. Hope you all enjoy it as much as I do!
Ingredients
1 Cup Oats
1½ Cup Flour
1 Tablespoon Sugar
3 Teaspoons Baking Powder
Pinch of Salt
2 Eggs
1½ Cup of Vanilla Soy Milk
¾ Cup Soy Milk + 1½ Tablespoon Vinegar
1 Large Banana Sliced Thin
Chocolate Chips
Instructions
In a blender grind the oats until it resembles flour.
Mix all the dry ingredients and add in eggs and 1½ cup of soy milk, combine.
In a cup combine the ¾ cup soy milk with vinegar and let sit for 2 minutes.
Add the mixture into the batter and stir!
Get your pan nice and hot and add a tab of butter to prevent the pancakes from sticking.
Place batter in pan and add slices of banana and chocolate chips on top.
Once you think your pancake is done **when bubbles appear, and begin to pop - flip it over and let it cook on the opposite side.
