Swweeeeet potato salad
As a mom of 4 I don't need the meals I make to be fancy, I need them to be quick and relatively easy... and of course delicious!! We love potato salad in the summer, well any time of year actually, but at times I love to change it up and use sweet potatoes instead. I also love love love to add pickles to this salad for crunch and extra flavour!! This recipe will make a large portion either to feed several people at a potluck or to feed my family of 6 for a couple of meals.

Ingredients:
5 sweet potatoes
8 eggs
2 medium or large dill pickles
1 green onion
Dressing ingredients:
1 cup plain greek yogurt
2 tablespoons mustard
4 cloves garlic
Juice of 1 lemon
¼ cup olive oil
¼ cup parmesan cheese
Salt and pepper to taste
Directions:
Peel the sweet potatoes and cut them into quarters. Boil them in a large pot of water until you can stick a fork all the way through. Once cooked, drain and let cool. At the same time, boil the eggs for approx. 8 minutes until cooked through. Once cooked, let the eggs cool. Once cool, peel the eggs and then cut them into cubes. Cut the pickles into small cubes and thinly slice the green onion.
Add all of these ingredients together into a large bowl.
To make the dressing: place all of the dressing ingredients together into a blender or food processor and blend well.
Pour the dressing into the bowl with all of the other ingredients and you’re done!
