Healthy, Super Moist and Delicious Zucchini Bread

3 cups whole wheat flour

1 tsp salt

1 tsp baking soda

1 teaspoon baking powder

3 teaspoons ground cinnamon

3 eggs

½ cup almond or coconut milk

½ cup olive oil

1 ½ cups coconut sugar or 1 ½ cups pure maple syrup

3 tsps vanilla extract

3 cups grated zucchini

1 cup chopped walnuts (optional)

Directions:

  1. Preheat oven to 325 degrees F (165 degrees C) grease two 8 x 4 inch pans ( I like to grease with coconut oil)

  2. Sift flour, salt, baking soda, baking powder, and cinnamon into a bowl.

  3. Beat eggs, milk, olive oil, sugar, and vanilla extract together in a large bowl. Add sifted ingredients and beat well. Stir in zucchini and walnuts until well combined. Pour batter into prepared pans.

  4. Bake in preheated oven until toothpick comes out clean, about 60 minutes. Cool in pans on a wire rack for 20 minutes. Remove bread from pan and cool completely.
