Cinnamon French Toast - Super healthy


I love breakfast. It's definitely my favourite meal of the day.Finding easy,healthy, and delicious meals is something that I'm passionate about. All of my 4 kids love this one too, which is a huge deal! These taste so good, it's almost like you're eating a cinnamon bun.

What you'll need to make 2 pieces:

  • 2 pieces of sprouted grain bread

  • 2 eggs (I acutally like to use 3 - I like the bread thoroughly covered in egg)

  • 2 tbl coconut milk

  • 1 tsp cinnamon

  • 1 tsp vanilla extract

Set the bread aside. Put all of the other ingredients into a bowl and whisk with a fork until well blended. Then take one piece of bread and soak it in the egg mixture until thoroughly covered, approx 1-2 minutes. Remove the bread and fry it in a pan with a bit of coconut oil. Cook thoroughly. Then add the second piece of bread to the bowl and let it absorb the remaining egg mixture. Cook thoroughly. Add a bit of pure maple syrup and/or fruit on top. I also love to heat frozen berries in a pot and then add them to the top of my french toast. It's like adding a berry syrup :)
